Convenient bread is a preparation that has been popular on the web for some time. Today we reveal the recipe for comfortable gluten-free bread, designed specifically to satisfy those who need to eliminate gluten from their diet.
To prepare the dough, all you have to do is work the indicated ingredients in a bowl for the indicated time. Before dedicating yourself to preparing the dough, always carefully check that the products chosen are certified gluten-free and carefully clean the surfaces to avoid dangerous contamination. For the bread
- Gluten-free bread flour – 400 g
- Water – 320 ml
- Dry brewer's yeast – 2 g
- Fine salt – 8 g
- Sugar – 1 teaspoon
Preparation
Convenient gluten-free bread
First, place the gluten-free bread flour in a bowl. Then add the dry brewer's yeast , sugar and salt . Start adding the water a little at a time, taking care to mix with a fork. Work everything until you obtain a well-blended mixture.
Cover the bowl with cling film and let rest at room temperature for 15 minutes.
Using a silicone spatula , take the dough from the sides and bring it towards the centre , pressing well. With this technique you complete the circle of the bowl. Cover and let rest for 30 minutes before repeating the step. In total, do this at least 2-3 times.
Place the dough in the refrigerator for a minimum of 8 hours and a maximum of 24.
Then transfer the dough onto a well-floured pastry board and gently spread it with your fingertips to form a rectangle. Fold it like a book first in one direction and then in the other then round it to give it the shape of a loaf (round or elongated).
Place it to rise in the special basket or in a bowl lined with a clean cloth, washed without fabric softener and with the inside of the container well dusted with gluten-free flour (rice and corn are also fine as long as they are fine). Let it rise in the oven with the light on until it doubles in size (it will take 2-3 hours).
At this point, transfer it to the oven tray by gently turning it upside down. Cook at 220°C for 35-40 minutes then remove from the oven and transfer to a wire rack to cool.
If you want, you can bake gluten-free bread in the appropriate cast iron or ceramic bread pan . In this case, heat it in the oven for at least 30 minutes then gently transfer the loaf and cook at 220°C for 30 minutes with the lid and at 200°C for 20 minutes without the lid.
Conservation
The bread prepared in this way can be stored for 3-4 days in a bread bag. To preserve it for longer we suggest cutting it into slices and placing it in the freezer in special plastic bags for 2-3 weeks .
