Eggless lemon cake

No one will ever think that the dessert you are offering them is a lemon cake without eggs, milk or butter. Try it to believe it!

When it comes to preparing desserts, we immediately think of butter, eggs, milk and large doses of sugar. It goes without saying that this, especially for those who pay particular attention to their figure, is a real worry unless you decide to prepare the lemon cake without eggs. The intense citrus scent will be distinctly perceived in what will soon become one of your favorite recipes.

The reason is easy to say: we offer you a recipe for preparing lemon cake without butter and eggs, light beyond all imagination, very simple to make and also perfect for vegans . Don't think it's possible to prepare a lemon dessert without eggs? You will have to think again!

Preparation

Lemon cake without eggs and milk

First, wash the lemons well (choose organic ones with untreated peel) and dry them. Use a grater to remove the zest, taking care not to remove the white part with a bitter taste. Now you can squeeze the juice from both and transfer it into a bowl.

Also add the water and oil and mix until you obtain an emulsion.

Add the sugar and grated zest and let it dissolve well.

Finally, add the flour (you decide whether to sift it or not) and the yeast , mixing until there are no more lumps.

Pour the mixture into a 24cm diameter mold lined with baking paper, or oiled and floured or sprayed with the appropriate release agent and cook at 180°C for 30-35 minutes , testing with a toothpick before taking out of the oven.

Once ready, take the lemon cake out of the oven and let it cool completely before removing it from the mold and decorating it as desired with a sprinkling of icing sugar .

If you want, with the same recipe, you can also prepare the lemon donut without eggs. This dessert, which immediately takes us back to childhood memories, will cook at the same temperature for about 30 minutes . As before, the toothpick test will tell you when it is ready.

Conservation

The lemon cake without eggs, milk or butter can be kept under a cake pan for up to 3-4 days as soft as if it had just been made.
