  • Luganega sausage – 400 g
  • Red pepper – 1
  • Yellow pepper – 1
  • Garlic – 1 clove
  • Extra virgin olive oil – 2 tablespoons
  • Rosemary – 1 sprig
  • Fine salt – to taste
  • Pepper – to taste

As always, the first thing to do is wash the peppers and remove the seeds and internal white filaments.

Once this is done, cut them into cubes of about 1.5 cm on each side (or into strips) and transfer them to the pan together with the oil and the garlic clove. Add a pinch of salt and cook for 10 minutes.

Cut the sausage into pieces of about 3-4 cm and place them in the pan together with the rosemary. Brown it over high heat for a couple of minutes then lower the heat and cook. It will take about 20 minutes . Finally, season with salt and pepper and remove the rosemary.

Variants

We have proposed a simple version, we could almost define it as basic. Without effort, however, you can make it even richer. As? Here are some ideas:

  • Sausage, Peppers and Potatoes : Let's face it, this dish is one-and-done perfection and making it is super simple. Cut a large potato into one centimeter cubes and place it in the pan with the peppers. Continue as per the recipe, leaving to cook until the potatoes are tender when pierced with a fork.
  • Pepper and onion sausage : lovers of strong flavors will love this. In this case all you have to do is add a not too finely sliced ​​red onion together with the sautĂ©ed garlic.
  • With capers : simple but tasty ingredient, it will make the dish irresistible. We advise you to add a teaspoon (desalinated or in vinegar), then paying attention to the amount of salt added. The idea of ​​adding some olives is also excellent. In this case, it is better to use oregano instead of rosemary.

Conservation

This second course will keep in the refrigerator for 2-3 days . When consuming it, it is advisable to reheat it in a pan.
