Preparation
Microwave cauliflower
First, as always, remove the florets and wash them under running water. If you want, you can keep the leaves and cook them together with the inflorescence or use them in a minestrone.
Transfer the cauliflower into a glass bowl , cover it with microwave-safe cling film and pierce the surface with a toothpick.
Cook at 600 W for 9 minutes then let everything rest for another 5 before serving.
If your microwave has a special function and a corresponding container for steam cooking, use those and always calculate about 9 minutes of cooking . The cooking time of the cauliflower in the microwave may vary depending on the size of the pieces so after the first 9 minutes make sure it is tender by piercing it with a fork.
Alternatively you can steam cauliflower in the traditional way.
Once cooked you can sauté it in a pan with oil, garlic, chilli pepper and anchovies to create a tasty side dish or use it as a base for meatballs and burgers .
Conservation
Microwaved cauliflower can be stored in the refrigerator, in an airtight container, for 2-3 days . Our advice is to season it just before bringing it to the table.
