Air fryer eggplant parmigiana

From the Italian tradition comes a lighter reinterpretation with the unmissable aubergine parmigiana cooked in an air fryer.

In itself it is an important and substantial typical product, but with the recipe for aubergine parmigiana in the air fryer everything becomes lighter . With this particular cooking method, all foods are healthier and more digestible, because there is no formation of additional fats that could weigh them down. A few minutes are enough to obtain a parmigiana as good as grandma's. The list of ingredients is not long, but everything is necessary and essential to respect this long tradition. Get aubergines , mozzarella , a genuine tomato sauce and extra virgin olive oil, to give everything even more flavor.

Preparing the recipe for eggplant parmigiana in the air fryer

  1. First, wash and dry the aubergine, then remove the top end.
  2. Cut it into thin slices , about 1 cm thick and grease them with a drizzle of oil on both sides, or better yet use spray oil.
  3. Place them in the fryer basket, without overlapping them (alternatively, you can stack them on a large toothpick, keeping them spaced apart from each other).
  4. Add a pinch of salt and fry at 190°C for 15 minutes , turning them halfway through cooking.
  5. In a bowl, pour the tomato sauce and flavor with fresh basil, a pinch of salt and a drizzle of olive oil; then, mix.
  6. Get a baking tray that can fit in the fryer. Pour a layer of tomato sauce, then a row of aubergines.
  7. Cut the mozzarella into cubes and create a row of these, before sprinkling a little grated parmesan.
  8. Repeat these steps with another layer of sauce, then aubergines, mozzarella and parmesan; finally, cover with a layer of sauce.
  9. Place the tray in the basket and cook at 200°C for 15 minutes . Once cooking is finished, serve immediately!

Conservation

Air fryer aubergine parmigiana is a typical product of the Italian tradition, the recipe of which is untouchable ; using the air fryer, however, you can obtain a light dish but with its traditional and special taste. If you have leftovers, store it in the fridge for 1-2 days , in an airtight container.
