Anti-cold risotto

The anti-cold risotto with spinach, almonds and turmeric is truly a marvel of taste and healthiness . All the ingredients we have chosen to season the rice, therefore the spinach, the turmeric powder and the almonds, are among the most powerful stimulators of the immune system, and therefore strengthen the body's natural defenses, preventing it from "falling like pears” at the first cold snap.
How to make anti-cold risotto
- First you need to cook the spinach. If they are fresh, just place them in a non-stick pan, cover them with a lid and, on a gentle heat, let them cook directly in their own water . If they are frozen, blanch them in salted water for a few minutes, then squeeze them and chop them with a knife.
- Finely chop the white onion , which you will then brown in a few turns of oil.
- Heat the homemade vegetable broth, which is healthier and has less salt than stock cubes.
- Toast the rice in the pan for 1-2 minutes, then gradually add the boiling broth, spinach, turmeric and season with salt. Let it cook without stirring too much.
- Turn off the heat and add two good handfuls of grated Parmigiano Reggiano to mix everything together .
- Coarsely chop the toasted almonds and also add them to the rice.
