Battered apple fritters are a classic Carnival dessert that can be prepared all year round, delicious and perfect for making your friends, relatives or even your children happy. They can be flavored in many ways: with grappa, lemon or white wine. Even when it comes to apples, you're spoiled for choice. We recommend the Golden ones for a more delicate taste, the Granny ones if you love the sweet-sour contrast.

The preparation is really simple and the secret is all in the right consistency of the batter . Eat them as soon as they are made, decorating them with icing sugar and, if desired, some ground cinnamon.

How to prepare the apple fritters recipe

First, focus on the apples . After peeling them, remove the central part with a corer . If you don't have this tool available, skip this step for now.

Cut them into half a centimeter slices and, if you haven't done so before, remove the center using a plastic cap. You will have to get the classic central hole. Transfer them to a bowl and sprinkle them with lemon juice .

Prepare the batter by breaking the eggs into a bowl and adding first the salt and then the milk . Finally, incorporate the sifted flour with the yeast . You will need to obtain a batter that is not too liquid and not too dense, capable of covering the apple slices and remaining attached.

In a pan, bring about 4 cm of seed oil to 170°C . Dip the apples one by one into the batter and fry until they are nice and golden. Fry a few at a time to prevent the oil temperature from dropping too low.

Then remove them with a slotted spoon and pass them on absorbent paper before serving. We recommend decorating them with a sprinkling of icing sugar .

Apple pancakes around the world

Apple fritters are characteristic in many areas of Europe and beyond. In Germany for example they are known as apfelkĂĽchle , a sort of apple pancake whose dough is flavored with beer. They are often served with an accompanying vanilla sauce.

In Italy the most famous are the panĂ de from Emilia Romagna with a batter made of stale bread cooked in milk. The Trentino version is usually flavored with apples and batter with grated lemon zest. In this case make sure you use an organic and untreated product.

Returning abroad, the Dutch applebeignet , typical of New Year's Eve and often enriched with almond paste, deserves a mention. Overseas, in the United States , apple fritters have an irregular shape and can be found either covered in icing or simply decorated with a sprinkling of icing sugar.
