Apple pie by Carlo Cracco

Carlo Cracco is, thanks to the various culinary talents in which he participated as a judge, one of the most famous chefs on the Italian scene. What not everyone knows, however, is his oppressive approach to the kitchen and pastry making : it was like this in France and at Gualtiero Marchesi. His great love, he confessed to Vanity Fair , is apple pie, the one his mother used to prepare for him with lots of apples and genuine ingredients.
Carlo Cracco's apple pie, the recipe of which is contained in the first book dedicated to desserts that the chef wrote together with the pastry chef of his restaurant Cracco in Galleria , is simple but at the first taste it will make you feel like a child again.
Of course, in the book Cracco, sweets and fantasy there is no shortage of sugar, but every now and then you have to transgress! Let's discover the recipe for Cracco's apple pie together.
Preparation
How to prepare Carlo Cracco's apple pie recipe
To prepare Carlo Cracco's favorite cake, start by peeling 2 apples and cutting them into pieces of about 1.5 cm on each side.
Place them on a baking tray, flavor them with vanilla bean seeds and sprinkle them with brown sugar . Mix well and bake at 170°C for 6 minutes .
In the meantime, place the butter at room temperature in a bowl and work it until it reaches a consistency similar to that of an ointment.
Add the sugar and mix the two ingredients with an electric whisk until they are light and fluffy. Then add the eggs , one at a time, and finally the flour sifted with the yeast . Finally, pour in the now cold apples .
Cut the two remaining apples into thin slices after removing the peel and core.
Transfer the dough into a 22 cm diameter baking pan lined with baking paper, distribute the apple slices in a radial pattern over the surface.
Bake at 170°C for 30 minutes, leaving it to cool completely before removing it from the mold and decorating it with a sprinkling of icing sugar.
Cracco's apple pie smells really good, but if you are careful about your figure we recommend you try our light apple pie , which is still delicious.
Conservation
The apple pie made with chef Cracco's recipe can be kept for about 2-3 days , in a cool, dry place, away from sources of light and heat, under a special glass bell jar for desserts. We do not recommend freezing in the freezer.
