There are many simple and quick side dishes but it always seems that when needed… they disappear. This is why we advise you to save the grilled peppers recipe, to have an idea to unleash during the summer. In our opinion this is the best way to cook peppers to fully bring out all their flavor and then they can also be frozen for the winter.

As you can imagine, you don't need many ingredients to prepare them, at most a drizzle of oil and a pinch of salt to season them once ready. Let's see how to prepare this tasty side dish!

How to grill peppers

You can prepare grilled peppers in a pan, on the griddle or using the heat of the barbecue . The important thing is that the outer layer is toasted well so it will be easier to remove the skin.

  1. First of all, we recommend using peppers when they are in season because they are decidedly tastier. Then proceed with washing under running water and drying with a kitchen cloth.
  2. At this point you can decide whether to keep the pepper inside or cut it into slices (a more practical and faster technique if you have little time). In the latter case, remove the stalk, seeds and internal white filaments.
  3. Heat a grill pan , preferably cast iron, or the grill and lightly oil the bottom using a piece of kitchen paper.
  4. When it is red hot, place the peppers skin side down and leave to cook over medium heat for about 10 minutes .
  5. Then turn them and continue cooking for another 5-6 minutes until they are nice and soft.
  6. Once ready, remove the outer skin if desired (they will be more digestible) and place them on a plate.
  7. Enjoy them plain or season to taste .

Preparing grilled peppers with the recipe we have given you is really simple and quick. If you want to cook them on the barbecue, the technique is the same but cook them over indirect heat so as to prevent them from burning, or prepare a whole grilled pepper from which you will then remove the skin.

Conservation

Grilled peppers will keep in the refrigerator, tightly covered, for 2-3 days . It is also possible to freeze them by first spreading them on a tray and then, once they have hardened, transferring them into freezing bags.

How to peel grilled peppers

Because many people peel the peppers. The answer is very simple, the skin of the pepper is rich in cellulose , therefore more difficult to digest. Furthermore, by removing it, the flavor of the peppers remains sweeter. There are many methods for peeling peppers , depending on how it is cooked, one more effective than the other. If we're talking about grilled peppers, however, the options aren't much different from baked peppers. We essentially have 3 methods:

  • Peel them raw . Use a potato peeler and remove the skin even before placing the vegetable on the plate or grill.
  • Peel whole grilled pepper . In this case the advice is to cook the pepper a lot, without worrying about blackening all the skin (which will be thrown away anyway). When it is nice and soft, place it in a plastic bag (for example the ones for the freezer) and let it cool for a few minutes. Then take it and peel it delicately with your hands (it will be very simple), open it to remove seeds and white filaments and then cut it into slices to serve it.
  • Peel the grilled pepper into slices . The interior is cleaned and cut raw, and then grilled as per the recipe. Only after having cooked the vegetable well can you peel it easily (while it is still hot or warm) and serve it on the table.

How to season them

Even in this case there is no more correct advice or infallible recipe. You will just have to decide to your taste what to add to the grilled peppers to make them even more inviting and tasty. However, in our opinion, here are the elements that should not be missing.

  • Oil . Use a good oil and lightly grease the peppers without exaggerating (you can also let me help you by using a pastry brush). Alternatively, for an even more particular flavour, why not try a very easy vinaigrette .
  • Salt . A pinch of salt (and pepper to taste) is perfect for enhancing the sweetness of cooked peppers .
  • Flavors . At this point the bulk is done, you can enjoy them just with salt and oil or enrich with herbs or spices to taste. We like a touch of parsley and fresh chilli pepper.

One last piece of advice : if you're not in a hurry, after seasoning them, place them in a container with a lid in the fridge for a few hours so that they take on all the flavors well.
