Do you often not know how to use artichokes? Below we offer you the recipe for preparing a delicious side dish: artichoke and potato flan. To make this pie you will first have to boil the carefully cleaned artichokes and potatoes and then, after blending them, proceed with cooking in the oven.

The other necessary ingredients are few and, in all likelihood, already present in your pantry: eggs, breadcrumbs and grated cheese. Furthermore, you can also prepare the flan in advance so that you simply have to reheat it before serving. Now let's see all the preparation steps.

How to prepare the artichoke and potato flan recipe

First of all, clean the artichokes : remove the hardest outer leaves and remove the tips. Cut the artichokes into wedges and remove the internal beard.

Peel the potatoes , wash them and cut them into chunks. Place a pan of water on the heat, bring to the boil and salt the water. Dip the artichokes and potatoes into the boiling water and leave to cook for 15 minutes after they come back to the boil.

Once the cooking time has passed, drain the potatoes and artichokes. Transfer them to a bowl and let cool. Blend with an immersion blender.

Add the egg , grated parmesan and breadcrumbs to the resulting mixture and season with salt and pepper . Mix well to combine all the ingredients.

Distribute everything inside an oiled baking dish, level well using the back of a spoon or spatula. Sprinkle the surface with a little breadcrumbs and bake in a preheated oven at 200°C for 30 minutes .

Remove the flan from the oven and leave to cool just a few moments before serving.

For an extra idea: if you want to make your flan even tastier and tastier you can add chunks of cheese such as provolone or diced ham or bacon. If you prefer a lighter dish, we recommend opting for the classic artichoke pie .

Conservation

The potato and artichoke flan will keep in the refrigerator for a couple of days. You can reheat it in the oven or microwave before enjoying it.
