Artichokes and potatoes in the air fryer
In just a few steps you can prepare an excellent side dish based on artichokes and potatoes in the air fryer. Here's how with our recipe.
The hunt for the perfect side dish never seems to end. Yet great results can often be achieved even starting from simple, seasonal ingredients as in the case of artichokes and potatoes in the air fryer. Taking advantage of this versatile appliance once again, we can cook both in one go.
The completely optional addition of grated bread will make this side dish even tastier, almost as if it were au gratin . Excellent for meat dishes, such as lamb, but also fish, it can be prepared with very little effort with both fresh and frozen artichokes .
How to prepare the artichoke and potato recipe in the air fryer
- First clean the artichokes . Remove the final part of the stem and thin it with the help of a paring knife. Then remove the outermost layer of leaves, the tips of the artichokes and finally divide it in half to remove the internal beard. Cut four artichoke segments and place them in water acidulated with lemon juice.
- Also peel the potatoes and cut them into 1.5cm pieces.
- Drain the artichokes well, place them in a bowl together with the potatoes and season with salt, pepper, breadcrumbs and oil, mixing everything well.
- Transfer to the air fryer basket and cook at 180°C for 30 minutes or until the potatoes are very tender.
If you use frozen artichokes we advise you to follow the instructions on the package to understand whether they should be left to defrost before using them or whether they can be used immediately. Finally, as mentioned, the addition of breadcrumbs is completely optional .

This side dish with artichokes and potatoes will keep in the fridge for a couple of days in an airtight container.
