Artichokes And Potatoes
Artichokes and potatoes give life to a side dish worthy of a King: a perfect dish to be enjoyed in combination with fish and meat.
Artichokes and potatoes are two vegetables that go perfectly together and when cooked together can create a memorable dish . Think of the sweetness of the potato that blends with the bitterness of the artichokes, and then the softness that meets the crunchiness … in short, we are truly faced with the perfect side dish, so perfect that it could even be a single dish!
Artichokes, then, are rich in iron and therefore cannot be missing from our tables. There are many different types , with and without thorns, green and violet, each has its own characteristic and its scent: to make them raw, for example, the thorny ones are better while in this recipe violets are normally used.

How to cook potatoes and artichokes in a pan
- First of all, let's deal with cleaning. As for the artichokes, you must obtain the hearts by removing all the external parts that are too hard . Once you have removed the leaves, soak the artichokes in water and lemon , so as not to let them oxidize.
- Cut the potatoes into cubes of the size you prefer (we recommend 2-3 cm) and place in a bowl of cold water for a few minutes to eliminate some of the starch.
- Let's go to the pan: garlic, oil and obviously… hot pan! First put the well-drained potatoes and sauté them over high heat for 5-7 minutes until a nice crust is created.
- Then add the artichokes and about 1-2 glasses of water or broth.
- Add salt, lower the heat and leave to cook on a low heat for about 20-30 minutes until the potatoes and artichokes are soft.
- Finally add the parsley and remove the garlic.

If you want, you can also add a little breadcrumbs towards the end of cooking, so as to have an even more delicious side dish to bite into.
Baked artichokes and potatoes
If you prefer oven cooking, which is lighter and more delicate , you can follow the same recipe.
- Clean the vegetables and then arrange them on a baking tray.
- At this point, season everything with oil, salt and pepper, mix well to add flavor and then cook at 180°C.
- It will take about 20 minutes , but you check after 10 and if necessary, mix everything a little, so as to obtain uniform cooking .

storage
In both preparations you can keep this side dish in the fridge for 2-3 days , in a special container with a lid. We do not recommend freezing in the freezer.
