Artichokes stuffed with meat

Artichokes are a sign that spring is upon us . Excellent for creating refined side dishes despite their simplicity, they give their best when prepared stuffed. In fact, these flowers lend themselves well to numerous fillings and we, after giving free rein to our imagination with many fillings, decided to focus on the classic with artichokes stuffed with meat.

The ingredients are few and simple, as is the process. Once cleaned, perhaps the most tedious step unless you decide to buy an already cleaned product , they must be blanched for about ten minutes before proceeding with the filling and cooking in the oven. But let's see all the steps in detail.

How to prepare the recipe for artichokes stuffed with meat

First clean the artichokes by removing the stem, the outermost layer of leaves and their tips. With the help of a corer or a teaspoon, also remove the central beard. As you proceed with cleaning, immerse the artichokes in water acidulated with the juice of a lemon to prevent them from blackening.

Bring a pan full of salted water to the boil and blanch the artichokes for 15 minutes .

In the meantime, dedicate yourself to the filling. In a bowl mix the minced meat , the chopped garlic together with the parsley , the egg , salt and pepper . Adjust the consistency with breadcrumbs .

Drain the artichokes and let them cool so you can handle them. Stuff them with the filling, pressing so that they fill well between the leaves. As they are ready, place them on a lightly oiled baking tray.

Cook at 180°C for 25 minutes . We recommend letting them cool for 10 minutes before serving .

If you want, you can also stuff the artichokes without blanching them and extend the cooking in the oven as you see in the video . In this case you will have to leave them at 180°C for 45 minutes, placing a drop of water on the bottom of the pan.

Ours is a classic version of artichokes with meat. If you want, you can replace part of the minced meat with sausage crumbled by hand or with chopped mortadella . You will get a tastier filling.

We also love the "poorer" version, i.e. Sicilian-style stuffed artichokes , perfect if you have vegetarian guests.

Conservation

The stuffed artichokes will keep in the refrigerator, well covered in cling film, for 2-3 days. We recommend heating them in the oven or air fryer before serving.
