How to prepare the asparagus and sausage risotto recipe
- First, wash the asparagus under running water. Flex the stem to remove the woody part and cut the remainder into rounds, but leave the tips whole.
- Remove the casing from the sausage and crumble it with your hands into a pan.
- Add the asparagus stalks and leave to brown for a few minutes over medium heat.
- Add the rice, toast it for two minutes then add the white wine.
- When you no longer smell alcohol rising from the pan you can start actually cooking the rice, adding the boiling broth one ladle at a time. For perfectly cooked rice, in fact, the edge should only be added when the previous one has been absorbed, ensuring that the rice is always just covered.
- It will take approximately 16-20 minutes before it is ready. Remember to add the asparagus tips 5 minutes before the end of cooking and season with salt.
- Once cooked, stir in the butter and cheese, season with freshly ground black pepper and serve.

Variations of risotto with asparagus and sausage
You can easily prepare, following practically the same recipe, risotto with wild asparagus and sausage. Wild asparagus can be used in the same way as classic ones for the preparation of this recipe. After washing them (in equal quantities), they should be added cut into pieces and added to the pan together with the sausage. In this case you can also immediately add the tips to make the preparation more streamlined.
Staying on the topic of quick and easy recipes, a further variation of this tasty first course consists of adding 200 g of sliced champignon mushrooms to the pan, immediately in the first cooking phase together with asparagus and sausage. The first dish you get will be even richer and tastier.
