Asparagus and strawberry risotto is a very simple risotto to prepare, perfect for a special lunch or dinner. The combination of asparagus and strawberries is perhaps a little unusual , but these ingredients go very well together, giving life to very delicate aromas. We advise you to consume this risotto immediately after preparation so as not to ruin its aroma and flavour.

How to prepare the asparagus and strawberry risotto recipe

To prepare the asparagus and strawberry risotto, start by carefully washing the asparagus , then remove the hard part of the stems, cut them into rounds, keeping the tips intact and steam them for 5-6 minutes .

In the meantime, wash the strawberries carefully, then remove the stalk and cut them into not too small pieces.

Place a large saucepan on the heat and brown the finely chopped onion in oil .

When the onion is well softened, add the rice , toast until it has changed color then add the white wine . Let the alcohol evaporate completely then add a few ladles of boiling broth . Continue in this way until the rice is cooked (it will take 16-18 minutes in total).

Add the sliced ​​asparagus , mix and after a few minutes add the strawberries .

Once cooked, turn off the heat, stir in the butter and parmesan and leave to rest for two minutes. Serve the risotto piping hot and finish with a drizzle of raw extra virgin olive oil, the asparagus tips and a few slices of strawberry.

A little tip: if you prefer you can also prepare the white asparagus and strawberry risotto by replacing the green asparagus with white ones.
