Peppers stuffed with tuna: the recipe for preparing a single summer dish perfect to serve even cold for lunch or dinner!

Stuffed vegetables are a preparation that is popular especially during the summer when peppers, tomatoes, courgettes and aubergines are more present on our tables. The peppers stuffed with tuna also enriched with cherry tomatoes, tuna, olives and capers are a perfect single dish for the summer and can be served hot, cold or warm. In fact, you can prepare them in advance so that you have them ready for lunch or dinner. Here are all the preparation steps : give it a chance!

Preparation of peppers stuffed with tuna

  1. Wash the cherry tomatoes and cut them into quarters then transfer them to a bowl together with the drained tuna.
  2. Season with a little salt, add the breadcrumbs and parsley and add as much oil as needed to make the mixture moist.
  3. Take the peppers, wash them, cut them in half and remove the seeds and internal filaments, then lightly salt the inside.
  4. Stuff the vegetables with the freshly prepared canned tuna filling.
  5. Place the stuffed peppers in a baking dish lined with baking paper, sprinkle with grated bread and finish with a drizzle of olive oil.
  6. Bake in a preheated oven at 180°C for 30 minutes .
  7. Once cooked, serve hot, cold or warm as desired. Enjoy your meal!

Recipe variations

There are truly many variations of this recipe. The simplest is obtained by adding 1 tablespoon of desalted capers and 50 g of pitted black olives , both chopped with a knife. Your peppers will have an edge! You can also add 2 tablespoons of grated parmesan to the filling or replace the parsley with basil .

Peppers stuffed with tuna and potatoes are also excellent. They are obtained simply by adding 1 large mashed boiled potato, 1 egg, 60 g of parmesan to the tuna. We advise you to omit the cherry tomatoes in this case but as always you can follow your tastes.

Conservation

Store the tuna stuffed peppers in an airtight container for about 2 days . You can also freeze them.
