With just a few ingredients you can make a delicious baked potato omelette, perfect for family dinners.

Today we prepare a recipe very similar to the classic potato tortilla, the ideal Spanish potato omelette to be enjoyed always, from breakfast to dinner. Our version won't be that different from the traditional recipe, except that we'll cook the pie in the oven.

The goodness of this recipe lies in the soft and spongy consistency, but also in the height of the omelette, which certainly makes it appetizing and inviting. The basic ingredients are potatoes and eggs. For an extra touch we recommend adding chopped aromatic herbs such as rosemary, thyme or oregano, onion but also bacon or other cured meats which will give the dish an even stronger flavour.

Preparation

How to prepare the baked potato omelette recipe

To prepare the baked omelette with potatoes, start by washing the potatoes carefully, then peel them and cut them into cubes of the same size (ideally 1 cm). Then cook them in boiling salted water for 15 minutes , to soften them. Once cooked, drain them and let them cool.

In a large bowl, beat the eggs with the salt and the grated cheese , add the potatoes , mix to mix everything together.

Transfer the mixture into a 24cm baking tray lined with baking paper (we recommend oiling it slightly to have a tastier base), then bake at 180°C for 25-30 minutes until it forms on the surface. an inviting crust. Remove from the oven and let your potato omelette cool slightly before cutting it into slices and serving.

For an even tastier omelette, while the potatoes are cooking, brown a golden onion cut into slices in a pan with two tablespoons of oil and, once cold, add it to the eggs beaten together with the potatoes. The baked potato and onion omelette is perfect for lovers of strong flavours.

Low potato omelette

If you want to enjoy an omelette made with potatoes and cooked in the oven, but you don't have much time, you can also opt for a classic low omelette. In this case the ingredients remain the same , but what changes is certainly the quantity of eggs (4 will be enough) and potatoes (use only 200 g).

Usually in the tall one the potatoes are cubed, while in this case it is better to cut them into slices of about 3 mm and blanch them for a few minutes. Then combine all the ingredients and beat with a fork. You can cook it in the oven , but if you want even quicker cooking, all you need is a pan , a knob of butter and a few minutes!

Conservation

The baked potato omelette can be kept in the fridge for a maximum of 1-2 days . We do not recommend freezing in the freezer.
