How to make pumpkin gratin

  1. Start by cleaning the pumpkin by cutting it into thin slices about 1-1.5 cm thick.
  2. Separately, in a small bowl, prepare the breading by combining all the ingredients (including the rosemary or parsley finely chopped with a knife and the garlic powder) and a few tablespoons of oil. Mix everything well and leave the mix aside, it will be the essential part to make your pumpkin gratin.
  3. Take a ceramic pan and put a drizzle of oil on the bottom. You can also do everything on the baking tray lined with baking paper.
  4. At this point, arrange the pumpkin slices and sprinkle with the previously prepared breading .
  5. Cook everything in a fan oven for 20 minutes at around 200°C until the pumpkin is cooked.
  6. To make it a little crispier you can turn on the grill for the last 5 minutes: your baked pumpkin au gratin will be so beautifully golden on the surface that your guests won't be able to resist it!

Here is a short video where you can see the steps and an alternative idea for flavoring the bread. We prefer to stay classic with garlic and oregano, two flavors that pair very well with pumpkin, but you're spoiled for choice.

Baked pumpkin au gratin: variations and ideas

Among the most famous (and tasty) variations is the Sicilian-style pumpkin gratin . The preparation and cooking times are the same but you will have to add to the gratin ingredients: 150 grams of black olives, 1 tablespoon of salted capers and cherry tomatoes to taste.

In addition to the classic orange pumpkin that we are used to seeing on our tables, there is also the yellow pumpkin variety which is much appreciated in the kitchen thanks to its sweet and delicate taste. The recipe for baked yellow pumpkin is the same as the one we revealed before, with the difference that processing will be simpler thanks to the thinner skin.

Conservation

This quick and easy side dish of crunchy gratin pumpkin can be kept in the fridge, well covered in cling film, for about 2 days . We do not recommend freezing in the freezer.
