Baked pumpkin flan, an easy recipe for autumn

How to prepare the pumpkin flan recipe

  1. First clean the pumpkin and cut it into 2cm pieces . Do the same with the potatoes after peeling them and place everything in a sufficiently large pot filled with salted water. Cook the vegetables for about 20 minutes or until they are tender when pierced with a fork.
  2. Drain them and, once they are lukewarm, mash them with a fork or a potato masher until they are pureed .
  3. In the meantime, finely chop the onion and brown it in a pan with the butter and a pinch of salt until it is tender and transparent.
  4. Transfer the purees into a bowl, add the onion and flavor with the parmesan, marjoram leaves, a pinch of pepper and nutmeg. Add the eggs and another pinch of salt if needed.
  5. Pour the mixture into a baking dish suitable for baking, buttered and covered with breadcrumbs. Sprinkle the surface of the pumpkin and cheese flan with more breadcrumbs, a few flakes of butter and cook at 180°C for 40 minutes . Let it cool before serving.

To make this pie even richer and tastier we recommend adding 150 g of diced provola cheese and 100 g of cooked ham, also diced, to the dough. You will feel how delicious it is, almost as much as the pumpkin and potato pie with vegetables .

Conservation

The pumpkin flan will keep in the refrigerator for 2-3 days . We recommend reheating it in the oven before consuming it.
