Stringy and cooked in meat sauce, baked tagliatelle nests are a quick first course to prepare and perfect for parties.

Baked pasta is a category of first courses that everyone agrees on and how you make it, you make it, it's always good. However, if you are looking for something special to bring to the table for the holidays or some special occasion, then we recommend the baked tagliatelle nests. Easy to portion , they are crunchy like lasagna and tasty like tagliatelle with meat sauce.

The beauty of this recipe is that the dried pasta should not be cooked first in water but placed directly in a baking dish with the sauce. The cooking will take place in the oven and all the flavors of the meat sauce will be absorbed by the pasta. Add to this the presence of the stringy mozzarella which gives the dish an irresistible taste and you will have everyone's throats.

  • Dried tagliatelle – 12 nests
  • Minced meat – 500 g
  • Celery – 1
  • Carrot – 1
  • Onion – 1
  • White wine – 1/2 glass
  • Tomato puree – 600 g
  • Mozzarella – 200 g
  • Grated Parmesan – 4 tablespoons
  • Extra virgin olive oil – 3 tablespoons
  • Laurel – 2 leaves
  • Salt – to taste
  • Pepper – to taste

Preparation

How to prepare ragù

First, prepare finely chopped celery (remember to remove the threads), carrot and onion.

Brown them in a pan together with the oil and bay leaves then add the minced meat . Brown it too for a few minutes before adding the white wine .

Bring to cooking by adding the tomato puree, salt and pepper . It is important that the sauce remains slow, a little liquid, so that the pasta can then cook in the oven. For this reason 30 minutes is more than enough.

Once ready, let it cool and then pour just under half of it onto the bottom of a baking dish suitable for cooking in the oven.

Place the tagliatelle nests next to each other, without overlapping them. Place a cube of mozzarella (or other stringy cheese of your choice) in the center and cover with the remaining sauce .

Complete with a sprinkling of parmesan and cook in the oven at 180°C for 30 minutes . Then turn on the grill and leave the pasta for another 5 minutes . Serve hot and stringy.

We do not recommend using fresh pasta : during cooking it could become gummy and stick. For an even richer first course, add a generous spoonful of béchamel sauce on top of each nest of tagliatelle, then cover with the sauce. You will feel how delicious it is.

The secret to the perfect success of the dish is to leave the ragù sufficiently liquid. If you are worried that the pasta will not cook well you can do two things: the first is to immerse it in warm water for 5-6 seconds before placing it in the pan; the second and cover the baking dish with foil so that the steam falls on the pasta during cooking. In this case it is better to grill it for 10 minutes to make sure you get a nice crust.

Conservation

The tagliatelle nests will keep for up to 3 days in the refrigerator covered with foil. Reheat them in the oven or air fryer before serving.
