How to prepare the recipe for beccafico sardines in an air fryer
- Start by preparing the filling . In a bowl, combine the breadcrumbs, raisins, pine nuts, parsley and garlic chopped with a knife, grated pecorino cheese, diced caciocavallo cheese and grated orange and lemon zest. Season with extra virgin olive oil, salt and pepper to taste. Mix all the ingredients well until you get a homogeneous mixture .
- Prepare the sardines by carefully opening them like a book , leaving one part attached, so as to form a sort of "butterfly". Gently remove the central bone and head, but leave the tail.
- Rinse them under running water and then dry them with kitchen paper.
- Fill the sardines with the prepared filling and close them. You can roll them up, placing a bay leaf once, a lemon slice and an orange slice between one roll and another, or simply close them like a book, pressing them lightly.
- Spray them with a few puffs of oil and cook them at 180°C for about 20-25 minutes or until they are well cooked and lightly browned on the surface.
- Serve the beccafico sardines hot, perhaps garnished with a few leaves of fresh parsley and a squeeze of lemon juice.
