Bedside cake
This typical Tuscan dessert made with puff pastry and custard is really delicious. Try it to find out why it's called a bedside cake.
The scendiletto cake is a typical Tuscan dessert whose origin of the name oscillates between two different interpretations. The first is purely etymological and can be traced back either to the carpet placed at the foot of the bed or to the women's dressing gown, both known precisely as bedside rugs. But we lean more towards another interpretation: the goodness of this puff pastry and custard dessert is an excellent reason to get out of bed .
Although it is a typical Tuscan recipe , it is difficult to identify the original preparation. If the ingredients, with the exception of some variations, are always the same, i.e. custard and puff pastry , there are several diatribes on the appearance. There are those who prepare it with a single pastry base covered with cream, those who enclose it between two sheets and those who still prepare it in the loaf pan by also placing the cherries inside. In short, as always, there is no agreement. We want to offer you the most traditional recipe , also leaving you with some indications on how to make the other variations.
How to prepare the bedside cake recipe
- First , unroll a roll of puff pastry on the baking tray in the oven, keeping the paper supplied.
- Prick it with the prongs of a fork to prevent it from swelling too much, sprinkle with 1 tablespoon of granulated sugar and cook at 180°C for 15 minutes .
- In the meantime, prepare the custard: heat the cream and milk in a saucepan together with the vanilla bean cut in half lengthwise.
- On the side, beat the egg yolks with the sugar and cornstarch .
- Slowly pour in the warm milk and cream (removing the pod), mixing with a whisk.
- Put everything back on the fire calculating about 5 minutes from the resumption of the boil. The cream must thicken reaching the characteristic consistency.
- Transfer it to a bowl and let it cool completely covered by a transparent film.
- Then spread the cream on the cooked and cooled puff pastry and close with the remaining puff pastry , pressing well along the edges to seal.
- Bake at 180°C for 20 minutes.
- Serve the Tuscan bedside rug after it has cooled and cut into squares and don't forget to sprinkle with icing sugar !

Tuscan bedside cake: variations
As mentioned, there are several variations of this dessert, although the ingredients remain the same. The first consists in spreading the cream on the cooked pastry without closing it with another puff pastry.
The second and perhaps more widespread instead involves the use of a single puff pastry placed halfway inside a loaf pan. Then stuff the inside with the cream, add the sour cherries in syrup and finally close by folding the remaining pastry, sealing well. The plumcake bedside cake bakes at 200°C for 30 minutes .

storage
The bedside rug cake can be kept out of the refrigerator for a day at most, in addition it is better to store it in a cool place. It can be eaten both cold and at room temperature.
