Befana beans are a warm, rich and inviting dish, just what you need to warm up during the cold winter evenings. The main ingredient of this recipe is black beans , just like the coal that is brought to naughty children during Epiphany… with the difference that this soup is not a punishment, but a gift full of gluttony!
You can flavor the beans as you like, and we used bacon and lard, binding everything with tomato puree. Try it at home too: the result will be truly surprising !

- Black beans – 1 Kg
- Onion – 1 finely chopped
- Lard – 150 g
- Diced bacon – 150 g
- Tomato puree – 500 g
- Salt – to taste
- Pepper – to taste
- Chili pepper – to taste
- Sausages – 3 (optional)
Preparation
how to make befana bean soup
First of all, take care of the beans and boil them in a pan full of water for about 3 minutes . Once the time has passed, leave them in the water, away from the heat, for another 50 minutes. If the beans become too dry, add a few ladles of hot water: the perfect consistency should be that of a thick soup.
In a pan, fry the finely chopped onion in oil, then add the bacon and lard and let everything brown for about five minutes. At this point, pour in the tomato puree, season with salt and pepper and, finally, add the chilli pepper to taste.
Add the beans together with a little of their cooking water and leave to simmer over low heat for about 20 minutes, so that they flavor well. If you wish, you can add pieces of sausage previously sautéed in a little oil at the end.
If you want, you can also prepare toasted bread feasts in the oven, ideal to accompany this dish . Another alternative is to use bacon or lard in cooking, while for a vegan version remove the meat and flavor with a little vegetable broth.
