Blended fruit cake

Blended fruit cake is a real concentrate of flavor: let's see together how to prepare this dessert without butter.

It may have happened to you that you have some ripe fruit to use or, more simply, that you want a light but tasty dessert at the same time. Then the blended fruit cake recipe is the one for you. When you taste it you will find yourself with a moist and flavorful cake that will become one of your favorite quick and easy desserts.

Perfect for breakfast and a snack for the little ones, this easy cake is obtained by simply blending some fresh fruit to taste (perfect peaches, apricots, apples and pears) and mixing them with the other ingredients. Have we intrigued you?

Preparation

First, wash (or peel) the fruit carefully. If you have mature ones it's even better. As for the types, you can use seasonal fruit without problems but the most suitable are certainly apples, pears, peaches and apricots, bananas, strawberries and kiwis . Green light also for a mix of these.

Transfer it to a blender together with the milk and blend everything well until you obtain a smooth consistency.

In a bowl, break the eggs , add the sugar and whip with an electric whisk until the mixture is light and fluffy.

Still with the whisk running, slowly pour in the oil , then the milk and the fruit .

Finally, lowering the speed of the whisk to a minimum, incorporate the sifted flour with the yeast .

Pour the mixture into a 22cm diameter mold lined with baking paper and bake at 180°C for 35-40 minutes , testing with a toothpick before taking out of the oven.

Serve the cake once it has completely cooled, finishing with a sprinkling of icing sugar .

Conservation

Given the presence of fresh fruit in the dough, this cake will keep for 2-3 days, preferably in the refrigerator and well covered with cling film.
