Boiled artichokes are a quick and easy recipe present on all Italian tables from winter to spring, even if the best period to consume them is between the months of December and January, as they are more tender and there are more variations available . For those who love artichokes, however they are cooked, they are always excellent, but in the boiled variant, they take on greater value as it is possible to enjoy them with cheese, meat or fish in a distinct way.
The moment they are boiled, it is possible to best enjoy the aroma and delicate flavor of these fabulous vegetables. Boiled artichokes are part of the culinary tradition of every Italian region, which is why it is rare to find someone who is not able to appreciate them. Let's see together how to prepare them!

Preparing the recipe for boiled artichokes

  1. The first step on how to cook boiled or boiled artichokes consists in eliminating the hardest leaves and the stem of the artichokes.
  2. At this point, cut them into segments and remove the internal beard, or leave them whole, always taking care to remove the beard.
  3. immerse them in acidulated water , a solution of water and lemon to prevent them from blackening (this procedure is valid for any method of cooking artichokes).
  4. In a large pot, bring plenty of salted water to the boil and add the vinegar and finally the artichokes.
  5. You can decide based on the size whether to cook the artichokes whole or divided into two or more parts. The cooking time for boiling artichokes varies according to their size , for example violet artichokes require around 40 minutes. Boiling smaller artichokes requires a cooking time of approximately 20 or 30 minutes. For those cut into pieces, 15-20 will be enough, however always check that they are soft before draining them, piercing them with a fork.
  6. Once cooked, drain them and serve them with an emulsion based on lemon, oil, vinegar, salt, pepper and even chopped parsley leaves.

Boiled artichokes can be kept for 2 days after cooking, taking care to place them in the refrigerator in a well-sealed container or with transparent film. We recommend leaving them out of the fridge at least 30 minutes before tasting them.
