Broccoli dumplings
Preparing broccoli gnocchi, without potatoes, is a truly original idea. Here's how to make them with the easy recipe.
The idea of preparing gnocchi without potatoes is truly original. To do this you can really use many ingredients. Today we offer you broccoli gnocchi, ideal to prepare during the cold season when this vegetable is in season. To make them, three ingredients are enough: in addition to broccoli you will need flour and eggs.
The seasoning of the broccoli gnocchi without potatoes is at your discretion. From the simplest butter and sage to the tastiest and most substantial with cream or gorgonzola (or a combination of both) you are spoiled for choice. Let's see together how they are done.

- Broccoli – 500 g
- Flour 00 – 400 g
- Eggs – 1
- Fine salt – to taste
Preparation
How to prepare the broccoli gnocchi recipe
First, remove the broccoli florets and wash them under running water. Then cook them in plenty of salted water for 15 minutes . They should be tender when pierced with a fork.
Once this is done, drain them and let them dry (as well as cool) in a colander. Reduce them to a puree by mashing them with a fork or with a potato masher and then transfer them to a bowl.
Add the flour and egg and mix first with a spoon and then by hand, transferring everything onto the pastry board. Bear in mind that the quantity of flour depends on the size of the broccoli and how much water it has absorbed. Add more until you obtain a soft dough that does not stick your hands excessively.
Form little loaves by rolling portions of dough between your hands then cut them into pieces of about 1 cm. You can form the gnocchi of the size you prefer and, if desired, create the characteristic lines by passing them on the tines of a fork or on the rigagnocchi.
Once ready, boil them in plenty of salted water until they float to the surface, then pan them with the chosen seasoning.

The egg is completely optional. To obtain gnocchi also suitable for a 100% vegetable diet you can therefore omit it. Furthermore, if you like the idea of preparing vegetable gnocchi, don't miss the carrot and pumpkin ones.
Conservation
We recommend consuming freshly made broccoli gnocchi. At most you can leave them on a floured pastry board for a few hours waiting for cooking.
