Friarielli, broccoli, turnip tops: call them what you want but these broccoli in oil are truly delicious! Here is our recipe.

Today we want to offer you a different preserve than usual , perfect for preserving the flavor of winter in a jar. We are talking about broccoli in oil, known as friarielli. Before delving into the recipe it is in fact appropriate to make a clarification: broccoli, broccoletti, broccoli or turnip greens are the same thing even if in theory, broccoli is the larger one (similar to cauliflower) and green in colour.

Preparing crispy broccoli in oil is really simple and, in addition to the vegetables, you will need garlic, oil and chilli pepper. The rest of the work will be done by cooking which must be quick so that the broccoli does not lose its colour. So get some sterilized glass jars and get cooking: you won't regret it.

Ingredients

For the broccoli in oil

  • Broccoli (broccoletti, broccoli, turnip greens) – 1 kg
  • White vinegar – 500 ml
  • Water – 1 l
  • Coarse salt – 1 teaspoon
  • Garlic – 4 cloves
  • Fresh chili pepper – 2
  • Extra virgin olive oil – to taste

Preparation

Start by cleaning the broccoli (or turnip greens or broccoli) and removing the hardest parts then wash them under running water.

Bring a pan with water , vinegar and salt to the boil and add the broccoli a few at a time. Let them cook for about 10 minutes.

In the meantime, prepare a large bowl filled with water and ice and, as you drain the vegetables with a slotted spoon, place them in the water. This step is optional but will allow you to maintain a nice bright green color.

Then transfer them to a colander and let them dry . If necessary, you can also pass them for a few hours on a clean cloth washed without fabric softener.

Transfer them to a bowl and season them with chopped garlic and chilli pepper and a little oil . Mix well, preferably with your hands, so as to distribute all the flavors.

Begin filling the previously sterilized glass jars, forming a layer of about 2 fingers. Then pour a little oil and continue until the jar is full. Remember to leave 1 cm of space from the edge . Alternating vegetables and oil is a useful technique to prevent too much air from remaining inside.

Keep the jars covered with the cap on the kitchen counter for a few hours then, if necessary, top up the oil level . Close hermetically and store in the pantry for a month before consuming.

Conservation

Friarielli in oil can be stored in the pantry for over six months . Once opened, place them in the refrigerator and consume them within a couple of weeks, making sure they are always well covered in oil.
