Caesar salad, original recipe: how to prepare it

  1. First, remove the leaves from the romaine lettuce and wash them under running water. Then break them into pieces with your hands and place them in a salad bowl.
  2. Cut the bread into one centimeter slices and then cut into cubes. Fry them in a pan with oil and garlic . Depending on the intensity of flavor you want, you can leave it poached or add it chopped. When the croutons are golden and crunchy, drain them and keep them aside.
  3. Prepare the caesar sauce, the one that enhances the flavor of the dish. In a blender with blades (both the Bimby and an immersion blender are fine) add the egg , lemon juice, vinegar , worchester sauce , salt and pepper and a piece of garlic . Blend, gradually adding the oil to obtain a sauce similar to mayonnaise.
  4. Now that all the ingredients are ready, add the croutons and parmesan flakes to the salad and dress with the sauce.

Over the years the dish has been revised and interpreted several times, including by chefs of the caliber of Gordon Ramsay. The most famous variations of caesar include the addition of shredded grilled chicken , crispy bacon and anchovy fillets. The choice is yours whether to enjoy it simple or customize it!

Caesar Salad: why is it called that? History

The history of Caesar, to the detriment of the name, is entirely Italian. It was invented by Cesare Cardini on 4 July 1924 when he saw his restaurant stormed during the Independence Day celebrations. Thus he created a salad that contained all the Italian flavors but with a particular note of the very American Worchester sauce. The success was immediate and this pushed him to patent the sauce.

Consider that July 4th was established as Caesar Salad Day and 2024 marked the centenary of its invention.
