Cantucci with the Thermomix

Let's find out how to prepare cantucci with the Thermomix both in the classic version with almonds and in other tasty variations.

Cantucci are one of the most gifted and sold biscuits in the world (think that they are in 3rd place!) and especially during the Christmas holidays they represent an excellent gastronomic gift . But what if we told you that you can prepare them at home quickly and easily? We are referring to the cantucci with the Thermomix!

Whichever model you have ( TM5, TM6 or TM31 ), you can effortlessly proceed with making the dough and subsequent double cooking (clearly in the oven). The choice is yours whether to try your hand at the traditional almond -based version or be inspired by our suggestions for making delicious variations . As? Let's see all the steps in detail.

Ingredients

For the nooks

  • Flour 00 – 320
  • Eggs – 2
  • Egg yolks – 2
  • Sugar – 280
  • Baking powder – 1/2 sachet
  • Toasted almonds – 200 g

Preparation

How to prepare cantucci with the Thermomix

First, break the eggs and put the two whole eggs and the yolks in the bowl. Blend 5 sec. speed 3.

Then add the sugar and mix for 10 seconds. speed 3 . Then add the sifted flour and yeast and finish kneading for 1 minute. speed Spike .

Transfer the dough onto a floured pastry board and incorporate the toasted almonds . Work everything until you obtain a homogeneous dough then give it the shape of a loaf of the length you prefer but with a width no greater than 3-4 cm

Without flattening them, cook in the oven at 180°C for 25-30 minutes . Remove from the oven, cut out the biscuits by making diagonal cuts between 1.5 and 2 cm thick and put back in the oven at the same temperature for another 10 minutes . Once cold they are ready to be enjoyed or given as gifts.

Here is a video with all the steps to make them. As you can see in this recipe they are cooked for longer only once but we advise you to proceed in the more traditional way with double cooking.

Variants

We have proposed the classic recipe with almonds so as to recreate the classic cantucci. However, if you want, you can use other types of dried fruit (they are delicious with hazelnuts or pistachios) or try your hand at more delicious preparations using chocolate chips for example. For dark cantucci (with chocolate chips or dried fruit) replace 30 g of flour with the same weight of bitter cocoa powder.

Conservation

The cantucci will keep for up to a month in a tin box.
