Carrettiere eggs: a second course ready in a flash!

Among the cost-saving recipes there are many that include eggs. This is a readily available, protein-rich and versatile ingredient, easy to include in a multitude of preparations. Today, we present to you a very popular recipe in Italy: the one for carter eggs.
This is a second course that is ready in just a few minutes . To make it you don't need many ingredients, in addition to the eggs you need to get breadcrumbs, pecorino cheese and – for the more adventurous – some red chilli pepper, which makes the result crunchy . In just a few steps, the dish is served!
Preparing the recipe for carter-style eggs
- Start with the breadcrumbs. Pour into a non-stick pan and toast it over moderate heat for a few minutes.
- Once done, transfer it to a bowl. Wash and chop the parsley with a knife, then add it to the breadcrumbs.
- Peel the garlic, remove the core and mince it , before adding it to the rest of the ingredients. Mix everything.
- Add the grated pecorino, a handful of pepper and – if you prefer – the chopped chilli pepper; mix to distribute everything well.
- Pour the oil into a large pan and place it on the stove. Heat it over low heat.
- Once done, shell the eggs in the pan, making sure they fall evenly and whole .
- Cover with a lid, season with salt and cook for 5 minutes .
- After these minutes, remove the lid and evenly cover the eggs (which will have a firm consistency) with the mixture of breadcrumbs and other ingredients, prepared previously.
- Cover again and cook for another 3 minutes .
- Once finished, you can turn off and plate.
Conservation
Carrettiera eggs are a delicious second course, just like peasant eggs , suitable for any occasion and ready in just a few minutes . The best advice is to consume them immediately, alternatively you can keep them for a few hours at room temperature.
