How to prepare the cauliflower and cannellini cream soup recipe

  1. Peel the shallot and slice it finely. Pour a spoonful of oil on the bottom of a pan, add the shallot, put on the heat and leave to brown, stirring occasionally for 5 minutes.
  2. When the shallot is soft and transparent, add the cauliflower cut into pieces. Leave to flavor for a few minutes before covering with the vegetable broth .
  3. Close the lid and cook over medium heat until the cauliflower is nice and soft . It will take about 20 minutes. Only at this moment add the cannellini beans, well drained of their preserving liquid. Continue cooking for 5 minutes, turn off the heat and blend using an immersion blender.
  4. If necessary, add more hot broth or water to adjust the consistency. Season with salt and serve. Finish by decorating as desired with crunchy bread croutons and chives .

Clearly you can use any type of legume to enrich the preparation. We opted for cannellini beans because their color does not change the final color of the dish. Conservation
