How to prepare the cauliflower soup recipe with the Thermomix

  1. First, peel the potato and cut it into chunks. Then wash the cauliflower and remove the florets.
  2. Put everything together in the Thermomix jug together with the shallot cut into quarters, the butter and the oil and cook for 10 minutes. Temp. Varoma speed 1.
  3. Then pour in the water and stock cube and leave to cook for 30 minutes. 100 degrees speed 1.
  4. Now all that remains is to blend everything to make the cauliflower cream creamy and smooth. Proceed by blending for 1 minute. speed 8 slowly adding two tablespoons of oil and a pinch of nutmeg. Also remember to add salt if necessary. The velouté is ready to be served, nice and hot.

Conservation

The velouté can be kept in the refrigerator, in an airtight container, for 2-3 days . It is also possible to freeze it, already portioned, and consume it after heating it in a pan or in the microwave.
