Cauliflower meatballs
Cauliflower meatballs are a genuine and substantial second course based on vegetables, a vegetarian recipe perfect even for the little ones.
Cauliflower meatballs are a rather simple second course to prepare and also perfect for making the little ones eat vegetables. Cauliflower, in fact, lends itself very well to the preparation of dough thanks to its delicate and soft taste, which today we will enhance with cheese, eggs, a boiled potato and fresh parsley.
Today we will prepare a light version of this dish, which we will cook in the oven, but if you want to make them even more delicious and inviting, you can also make fried cauliflower meatballs, and perhaps accompany them with a sauce of your choice: we will explain how to do it!
How to prepare the baked cauliflower meatballs recipe
- Start by washing the cauliflower thoroughly. Cut the florets and steam it for about 10-15 minutes. When they are soft, put everything in a bowl and mash them with a fork.
- Add the eggs, salt, pepper, grated cheese and chopped parsley.
- At this point, to make it firmer and more mouldable, add the breadcrumbs and then the flour and mix everything well with a fork or your hands.
- Form balls and transfer them onto a baking tray lined with baking paper, brush them with a little oil or use oil spray and bake.
- Cook at 180°C for 15-20 minutes , until they become golden and crispy. Then turn off the heat and let it rest for a few minutes before serving.
The Sicilian ones are also excellent in the oven, made tasty by the presence of anchovies and pecorino cheese in the mixture. Alternatively you can cook the cauliflower meatballs in the air fryer .
How to make fried cauliflower meatballs
- Cut the florets, wash them under running water and boil for about 10-15 minutes . They should be tender.
- Mash the cauliflower in a bowl and add the eggs , grated cheese , freshly chopped parsley , flour , salt and pepper . Then add the breadcrumbs little by little until you obtain a moist but not too sticky consistency.
- Form meatballs (round or slightly flattened according to your taste) and place them on a plate.
- Then pass them one by one in breadcrumbs or flour: this way they will be extremely crunchy.
- In a pan, heat half a centimeter of seed oil and fry the meatballs for 3-4 minutes on each side. They should be well golden.
- Remove them from the oil and pass them on a sheet of absorbent paper to remove excess oil. Serve them hot.

Conservation
These cauliflower meatballs can be kept for a maximum of 2 days in the refrigerator, in a food container. The fried ones, then, would be better to consume at the moment . We do not recommend freezing in the freezer.
