Crunchy and tasty, cauliflower pizza with vegetables is an excellent gluten-free recipe: to be cooked in the oven or in a pan.

Born in recent times, cauliflower pizza with vegetables is one of the most popular low carb recipes : it does not contain flour , which makes it ideal for intolerants and celiacs, or for all those who are looking for a light recipe.

In addition to vegetables, it can be filled respecting the ingredients of the traditional filling, therefore tomato and mozzarella. Cook the cauliflower pizza in a pan or in the oven : the result will still be excellent. Let's see how to do it!

How to make baked cauliflower pizza

  1. First you need to get the "cauliflower rice" . Place the tops in a blender and blend quickly until you obtain a grainy mixture, similar to grains of rice.
  2. Pour it into a bowl, add the eggs , parmesan and salt. If you like, you can also add freshly ground pepper. Mix with a wooden spoon or kitchen spatula.
  3. Transfer half the mixture onto a baking tray lined with baking paper and give it a circular shape approximately one centimeter thick.
  4. Press well so that the cauliflower pizza does not break.
  5. Bake at 230°C for 20 minutes , then remove from the oven and do the same operation with the remaining dough. Alternatively, you can bake a single tray, filling it to its full size.
  6. Once the cauliflower pizza is out of the oven, season it with pesto . Also lay the courgettes that you have cut with the help of a mandolin or a potato peeler into thin strips, the tomato into slices and the crescenza into chunks.
  7. Place back in the oven until the cheese has melted, then bring to the table, completing with some rocket.

How to cook cauliflower pizza in a pan

  1. To cook the cauliflower pizza in a pan instead, after dividing the dough into two parts, cut a sheet of baking paper giving it the shape of a circle as large as the base of your pan.
  2. Place half the mixture, pressing well, and cook for 10 minutes .
  3. Then turn it with the help of a plate or a lid and continue cooking for another 5 minutes , now removing the sheet of baking paper.
  4. Season as above and let the cheese melt.
  5. Finally add the rocket .
