Cheesecake with cherries

Cherry cheesecake is a cold, no-bake dessert perfect for summer. Here is our recipe for preparing it.

When we talk about no-bake desserts , excellent to be enjoyed cold, the first thought goes to cheesecakes. If we are in the middle of summer , then cherry cheesecake turns into one of the most popular recipes. There are many reasons, all quite immediate: it is good, simple to prepare and fresh. Do you need to know anything else?

The cherry cheesecake that we are offering you today is prepared in the classic way starting from a biscuit base and completing everything with a cream cheese . The cherries will be the topper of the dessert, distributed in the form of compote . In short, you will have understood: cherry cheesecake is truly irresistible!

How to make cherry cheesecake recipe

  1. First, grind the biscuits in the mixer until you obtain a flour.
  2. Melt the butter and add it to the biscuits, mixing well with a spoon to distribute it.
  3. Transfer everything into a 22 cm diameter springform cake pan lined with baking paper and press well with the back of the spoon to form an even layer.
  4. Transfer to the refrigerator for at least 30 minutes and in the meantime dedicate yourself to the other preparations.
  5. Take a saucepan with about 50 ml of fresh cream in it and place it on the heat, adding 10 g of gelatine previously soaked in water. Stir until it has completely dissolved, then leave aside to cool.
  6. Work the ricotta and the spreadable cheese until you obtain a cream, then incorporate the icing sugar and the seeds of the vanilla bean taken by dividing the stick in half lengthwise and scraping the inside with the tip of the knife. Add the cream and gelatin to the cheeses and mix everything well.
  7. Separately, whip the remaining cream with an electric whisk and add it to the cream cheese a little at a time, being careful not to dismantle it and using a soft spatula.
  8. Pour the cream cheese onto the now cold base and level it.
  9. Transfer to the refrigerator for at least 2 hours.
  10. Now let's move on to the cherry compote. Soak the remaining gelatine in cold water for about 10 minutes .
  11. After washing the cherries , pit them and transfer them to a pan with the sugar , juice and lemon zest.
  12. Mix and cook for about ten minutes , just long enough for the syrup to form.
  13. Drain the cherries and collect the syrup in the same saucepan.
  14. Add the well-squeezed gelatine and heat everything until it has dissolved.
  15. Add the cherries again and pour the mixture onto the now cold cake.
  16. Put everything back in the refrigerator for 3 hours .

Variations of the no-bake dessert with cherries

There are many variations to prepare this dessert, especially regarding the preparation of the cream and topping.

  • The cream . It is in fact very important to have a portion of semi-whipped cream , which will make everything puffy and delicious, however the other cheeses you use may vary: you can always use a little spreadable cheese such as Philadelphia and play with other ingredients such as mascarpone or plain yogurt or Greek yogurt. These latest versions with yogurt are definitely a little lighter and fresher, suitable for the hot period.
  • The topping . The topping can also be different, depending on the availability of cherries or even your taste. For example, you can simply heat about 200 g of jam in a saucepan, to make it liquid, and pour it over the cold cake to obtain a perfect cherry jam cheesecake. Furthermore, gelatine is not a fundamental ingredient in this case, use it if you want a thicker topping, otherwise you can also omit it.

The cherry cheesecake will keep in the refrigerator for up to 4 days. You can also freeze it , already portioned, and leave it to thaw in the refrigerator if necessary.
