Chestnut pudding

Chestnut pudding is a particular dessert, excellent to serve at the end of a meal with cream. Here's how to prepare it with freshly picked chestnuts.

Today we offer you a dessert to serve at the end of a meal, perfect for autumn. We are talking about chestnut pudding, prepared with chestnuts cooked in water , milk and a few other ingredients. The consistency of this dessert with chestnuts will remain slightly floury on the palate but the combination with chocolate makes it irresistible.

Despite its simplicity, this pudding requires two long cooking of the chestnuts. Don't be intimidated, once started it won't need your supervision. Furthermore, since it is a cold dessert, it can be prepared in advance and served at the end, finishing with whipped cream if desired.

How to prepare the chestnut pudding recipe

  1. First you will have to boil the chestnuts . Cut the peel with a small knife, put them in water and leave to cook for 40 minutes . Once cooled, patiently remove the peel and skin.
  2. Put them in the pan again this time together with the milk and leave to cook for an hour over low heat, stirring occasionally.
  3. In the meantime, soak the isinglass in cold water.
  4. Blend everything with the immersion blender. Add the cream and sugar, stirring until it has melted, then add the chopped chocolate with a knife.
  5. Once you have obtained a smooth cream, squeeze the gelatine sheets and add them, mixing well until they have dissolved. This phase is important or the pudding will not gel and form annoying lumps.
  6. Transfer it into the appropriate molds (both aluminum and silicone ones are fine) and once cold, transfer them to the refrigerator for at least 6 hours before serving.
  7. Gently turn them out onto a saucer and decorate as desired with whipped cream.

We love chestnut and chocolate pudding but if you want you can also prepare it more naturally, omitting the chocolate and adding only the seeds of a vanilla bean. Amaretto liqueur is also excellent, to be added in quantities equal to a small glass, for flavour.

Another easier dessert to prepare is chestnut tiramisu : with its unique flavor it will win you over at the first taste.

Conservation

The chestnut pudding will keep in the refrigerator for 3-4 days, covered with cling film.
