The perfect main dish for summer is chicken and potato salad, nutritious and suitable for many occasions.

A valid alternative to the usual salads and cold dishes is the chicken and potato salad. This is a quick and easy recipe, to prepare for any occasion. The result is a unique dish that you can serve cold , in which the goodness and flavor of the potatoes mixes with the tenderness of the chicken. Cooking is very simple and quick, because it only requires boiling the potatoes; similarly, you can also quickly roast chicken breast pieces. To make everything appetizing, very little is needed: oil, parsley, a little lemon juice and, to make the dish creamy , use mayonnaise or yogurt sauce.

Preparing the recipe for chicken and potato salad

  1. The first thing to do is peel the potatoes and cut them into pieces.
  2. Heat a saucepan full of water, which you need to add salt.
  3. When it reaches the boil, immerse the potato pieces and blanch them for 12 minutes. Once finished, drain and move them into a bowl.
  4. Take the chicken breast and cut it into bite-sized pieces.
  5. Place the meat in a bowl and season it with the lemon juice, then season with salt and pepper.
  6. Let the chicken marinate for about 20-30 minutes. Alternatively you can move on to cooking straight away.
  7. Next, drain the morsels and roast them on a grill or non-stick pan.
  8. When it is well cooked, put the chicken in a salad bowl and add the boiled potatoes, cut into pieces.
  9. Drizzle with olive oil and chopped parsley.
  10. Mix everything. To make the dish creamy, you can also add a few spoonfuls of mayonnaise. Once done, the dish is ready!

To enrich the sauce, don't miss adding a little yogurt to the mayonnaise , it will give that fresh and exquisite touch that you would never expect.
