Chicken Cacciatore is not a simple chicken with tomato sauce, but a very noble recipe typical of Tuscan cuisine. It is an economical, substantial and delicious dish, perfect to serve on any occasion and which everyone will really like!

Ingredients
For the chicken Cacciatore
- Chicken pieces – 1
- Peeled tomatoes – 400 g
- Celery – 1 stalk
- Carrot – 1
- Onion – 1
- Garlic – 1 clove
- Red wine – 1 glass
- Rosemary – 1 sprig
- Chopped parsley – 1 tbsp
- Extra virgin olive oil – 4 tablespoons
- Fine salt – to taste
- Pepper – to taste
Preparation
How to prepare the chicken Cacciatore recipe
Let's start with the meat: if you have chosen the whole chicken , clean it and cut it into pieces. Rinse the parts under running water, dry and leave aside. If present, removes any remaining feathers.
Finely chop the celery , carrot (after peeling it) and onion . Heat the oil in a saucepan, add the garlic , the freshly prepared sauté and the sprig of rosemary and leave for 10 minutes.
Add the chicken , skin side down, and brown for 3-4 minutes on each side before adding the red wine .
Add the peeled tomatoes crushed with your hands, salt and pepper and cover with the lid. Let the chicken cook for at least 40 minutes. At the end, flavor with fresh chopped parsley .

You can choose whether to prepare only chicken thighs and thighs , or also use breast and other parts. The choice is also yours whether to buy the whole bird or the one already in pieces (if you are not very practical, we suggest this option).
