Preparing the recipe for chickpea and chestnut soup

  1. Before proceeding, remember to soak the chickpeas for at least 24 hours .
  2. Subsequently, you can proceed to wash them under running water.
  3. Fill a pan with water and immerse the chickpeas. Boil on the stove for 1 hour .
  4. In the meantime, wash the chestnuts and boil them in another saucepan on the stove for about 40 minutes.
  5. When the chestnuts are well cooked, drain and peel them; if you prefer, you can also crumble them.
  6. Next, take a pan and pour the oil slowly onto the bottom.
  7. Add the chopped garlic and brown it over medium heat.
  8. Once done, pour the oil and garlic into the pot of chickpeas.
  9. At this point, you can also add the boiled chestnuts.
  10. Season with rosemary and bay leaves, then also with salt and pepper to taste.
  11. Continue cooking for about 15 minutes , stirring occasionally. Once finished, the soup is ready and you can let it cool before serving. Decide as you like whether to blend part of it or not.
