Chinese steamed shrimp dumplings
The beloved Xiao mai are Chinese prawn ravioli: here is the recipe for making them with the bamboo steamer!
Steamed prawn dumplings, xiao mai or siu mai in Chinese, are made of thin wonton dough and a filling made of prawn tails, Chinese cabbage, carrot and soy sauce. In essence they take the traditional meat-based recipe but replace it with chopped prawns .
For truly optimal steam cooking it is necessary to use the bamboo steamer because it is sweeter and keeps the tastes and aromas of your ingredients intact . We recommend lining your bamboo steamer with cabbage or salad leaves and taking into account that the ravioli on the basket shelf next to the steamer will cook faster than those further away.
Preparation
How to prepare the recipe for Chinese shrimp dumplings
To prepare the filling, chop the prawn tails with a knife until you obtain a very fine mixture. If you want to speed up you can use a meat grinder or a mixer.
Also finely chop the spring onion , carrot and Chinese cabbage and add them to the prawns. Season with soy sauce and grated ginger and mix well with a spoon to blend all the flavours. Let it rest for 30 minutes .
In the meantime, prepare the pasta for the ravioli. Make a well with the flour , slowly add the water together with a pinch of salt and knead until you obtain a smooth and homogeneous dough. Wrap it in cling film and let it rest for 30 minutes .
Form a string of dough with a diameter of 2 cm and then cut it into 2 cm pieces. Using a small rolling pin, roll them out one by one to obtain discs of approximately 8 cm.
Place a teaspoon of filling in the center of each and close like a bag. Then add a pea .
Place them in the bamboo steamer, lining each basket with perforated baking paper or cabbage leaves (you can use the outermost ones of the vegetable) and proceed with steam cooking for about 15 minutes .
Serve your Chinese steamed prawn dumplings while still hot with a littlesoy sauce .

A very common variant is obtained by adding 100 g of minced pork to the filling. In fact, what not everyone knows is that prawn ravioli are usually enriched with lard. We opted for a simpler recipe without meat .
Conservation
If you consume them immediately it is better , but if you have leftovers you can keep the prawn ravioli in the fridge for about a day. Store them in an airtight container and keep in mind that if you place them too close together they will tend to stick .
