Ingredients
For the pastry
- Flour 00 – 250 g
- Sugar – 100 g
- Cold butter – 150 g
- Egg yolks – 2
- Vanilla Extract – 1 tsp
- Salt – 1 pinch
For the icing
- Albumen – 1
- Sugar – 150 g
- Lemon juice – 1/2 teaspoon
- Gel dyes (optional) – to taste
Preparation
How to prepare the Christmas biscuits recipe with the Thermomix
Pulverize the sugar (or use icing sugar directly) by simply placing it in the bowl and blending for 30 seconds. speed 10 . Transfer it to a container and keep it aside for the moment.
Pour the flour and the cold refrigerator butter cut into cubes into the mixing bowl. Run the Thermomix for 40 sec. vel. 5.
Add the powdered sugar at the beginning, a pinch of salt and the vanilla extract and mix for 20 seconds. vel. 4.
Finally, add the egg yolks and mix for 20 seconds. vel. 4 . Transfer the dough to the pastry board and knead it briefly with your hands to form a loaf. Wrap it in cling film and let it rest in the refrigerator for at least an hour.
Once it is nice and firm, roll it out between two sheets of baking paper until it is half a centimeter thick . Using the pastry cutters with the Christmas shapes you prefer, cut out your biscuits and place them as they are ready on a baking tray lined with baking paper. Knead the leftover shortcrust pastry again, rolling it out and obtaining as many biscuits as possible.
Cook them at 180°C for 12-15 minutes, taking care that they do not burn.
In the meantime, rinse the bowl and prepare the icing. Add the sugar and blend it for 20 seconds. vel. 10.
Also add the egg white and lemon juice and finish mixing for 10 seconds. speed 6. If you wish to color the icing, divide it into many bowls and add a few drops of gel colouring , little by little until you obtain the desired shade of colour. Then transfer the icing into cones of baking paper or into the appropriate cake pen.
Once the biscuits are ready and cold , decorate them as you wish. Let them air dry for a few hours before enjoying or storing them.

If you prefer spicier biscuits , similar to classic gingerbread , you can simply add 1 teaspoon of cinnamon, 1 teaspoon of powdered ginger and 1/4 teaspoon of nutmeg to the dough instead of lemon. You will feel how delicious it is!
Conservation
