Cod in crazy water is a quick and easy second course as well as very tasty, perfect to enjoy with fresh bread.

Cooking fish in crazy water is quite ancient and was born from the need to enhance the flavor of the catch using poor and always available ingredients . Cod in crazy water is one of the many versions of the dish, ideal for a family lunch or dinner because it can be prepared with both fresh and frozen fish.

Cod fillets in crazy water are undoubtedly very practical if only for the fact that they have already been removed from the bones. The basic recipe involves the use of cherry tomatoes, garlic and parsley but it is possible to make the cooking juices even tastier by simply adding capers and olives .

How to prepare the recipe for cod in crazy water

  1. First, if you use frozen cod, let it thaw in the refrigerator. If you prefer to start with fresh fish, you need to clean it by removing the head, entrails and all the scales. Then rinse it under running water, even inside, and cut out the two fillets.
  2. In a pan, heat the oil with the garlic clove (also chilli pepper if you like) then add the cherry tomatoes cut in half and a pinch of salt, cooking for 5 minutes .
  3. Add the cod fillets, a glass of water and the parsley and leave to cook for 20 minutes . Then serve hot.

For an even tastier cod we recommend adding, together with the cherry tomatoes, 10-15 olives cut into slices and 1 teaspoon of desalted capers . You will feel how delicious it is!

We recommend you also try the cod baked in foil , another simple way to enhance the flavor of this fish.

Conservation

The crazy water fish can be kept in the refrigerator, well covered in cling film, for up to 2 days .
