Courgette and pepper pasta

Preparing the courgette and pepper pasta recipe
- Wash the courgettes and cut them into rounds and then divide them in half.
- Do the same with the peppers, eliminating the white parts and making small strips that are similar in size to the courgettes.
- Take a non-stick pan and grease it with a little oil .
- When the oil becomes hot, pour in the finely chopped shallot and let it brown.
- Add the peppers and cook over high heat for about 15 minutes .
- Then add the courgettes, salt and pepper and leave to cook for another 5-10 minutes.
- Meanwhile, cook the pasta in boiling salted water, leaving it to cook for about 2 minutes less than indicated on the package.
- Drain the pasta when it is still al dente and directly in the pan.
- Sauté it for a couple of minutes, adding a little cooking water to mix the ingredients well.
- Serve adding, if desired, a sprinkling of grated cheese.

This pasta is to be consumed at the moment. However, you can keep it in the fridge for 1 or 2 days , taking care to place it in an airtight container .
Before consumption, it is advisable to sauté it in a pan with a drizzle of oil. This way you can consume it in a hot but still enjoyable version. Also in this case the addition of parmesan is optional.
