Among the many recipes with courgettes , there is a truly versatile one that lends itself to being served as an appetizer, as a side dish or as a vegetarian second course. We're talking about air fryer courgette casserole. Much like a zucchini flan or pie , it is made from simple ingredients like potatoes and zucchini and then cooked in the air fryer.
The result is a soft and tasty courgette pie that lends itself well to being customized according to your tastes. We like it simple but if you want you can add a stringy heart , cubes of cheese or cubes of ham, bacon or speck . In short, free your imagination!
How to prepare the zucchini flan recipe in the air fryer
- First wash the courgettes and remove the ends. Then cut them into not too large pieces and keep them aside.
- Peel the potatoes and also cut into pieces of about 1 cm on each side. Season them with a spoonful of oil and a pinch of salt and cook in an air fryer at 190°C for 10 minutes.
- Add the courgettes seasoned in the same way and continue cooking for another 10 minutes.
- Transfer the cooked vegetables into a bowl and mash them with a fork then add the eggs, the grated cheese, the breadcrumbs, salt and pepper as needed and a few leaves of oregano or basil torn into pieces with your hands.
- Divide the mixture into 4 oiled aluminum cases covered with breadcrumbs, then cook the courgette flans in the air fryer at 200°C for 15 minutes . Remove from the mold and serve hot.
If you are looking for another simple and perfect side dish for the summer we recommend you try the courgette sticks in the air fryer : they can be prepared in an instant, they are light and perfect for replacing the classic chips.
Conservation
Once fresh, the air fryer courgette pie can be kept in the refrigerator, well covered in cling film, for 2-3 days . We recommend bringing it back to room temperature before serving or heating it slightly in the oven, fryer or microwave.
