Courgette hummus, the perfect sauce for the aperitif
Courgette hummus is a variation of the classic Middle Eastern recipe prepared without legumes. Here is the super creamy recipe.
Hummus is a Middle Eastern dip typical of India, South-East Asia and some areas of North Africa and is usually served with Arabic bread, unleavened bread, vegetable salads or crudités . It generally consists of a cream of chickpeas and sesame, but is now prepared in many variations including courgette hummus.
This sauce is perfect for those who follow a vegetarian or vegan diet as it does not contain ingredients of animal origin. The most important aspect is to choose seasonal courgettes because only they will give flavor to the sauce.
Preparing the recipe for zucchini hummus
- Start by washing the courgettes carefully, then peel them and cut them coarsely.
- Transfer them to a baking tray lined with baking paper, season them with a drizzle of oil and a pinch of salt and cook at 200°C for 30 minutes. Alternatively you can cook them in a pan with a drizzle of oil and a pinch of salt for 15 minutes.
- Once they have cooled, transfer them to a blender, adding the tahini sauce , lemon juice, garlic, cumin and oil and blend until you obtain a smooth and creamy sauce.
- Pour the courgette mixture into a bowl, cover with cling film and leave to rest for 30 minutes . Serve decorating the surface with sesame seeds.
If you want to prepare courgette hummus without tahini , a sauce based on sesame seeds, you can replace this sauce with a mix of dried fruit such as pine nuts, walnuts or almonds arriving at the same weight. Furthermore, it is possible to make the courgette hummus even more fragrant by adding a few leaves of basil or mint .
To obtain an excellent chickpea and courgette hummus, add 150 g of chickpeas to the preparation ingredients. Blend until you obtain a creamy consistency and remember to add 1 tablespoon of water if the mixture is dry.

The sauce prepared following this recipe can be stored in an airtight container in the refrigerator for a maximum of 3 days .
