Ready when the pasta is cooked, courgette pesto is prepared with some classic ingredients such as basil , garlic and pine nuts but we will also add courgettes , one of the most loved vegetables of all. How to prepare the courgette pesto recipe with the cooked Thermomix

If you decide to use it immediately to season the pasta, first cook it in plenty of salted water for the time indicated on the package.

  1. Dedicate yourself immediately to preparing the pesto as it will only take about ten minutes. Place the pine nuts and parmesan in the bowl and blend for 10 seconds. at speed 8. Keep aside.
  2. Pour 1 tablespoon of oil taken from the total into the bowl, add the garlic clove and brown for 2 minutes. 100°C speed 5.
  3. Then add the courgettes cut into slices and a pinch of salt and cook for 10 minutes. 100°C speed Soft Counterclockwise.
  4. Let the temperature of the mixture lower then add the basil , the remaining oil and the chopped pine nuts and parmesan prepared at the beginning. Emulsify everything for 20 seconds. Speed ​​8 .

At this point you can use it to season pasta or rice or even enjoy it on bruschetta . You can also customize the recipe in different ways. For a tastier variant, replace all or part of the parmesan with pecorino . The idea of ​​using almonds (definitely cheaper) instead of pine nuts is also excellent. Both those with the peel and the peeled ones are fine but keep in mind that the former will give a more rustic consistency.

Courgettes can also be eaten raw, especially if small and tender. So why not use them for an even quicker pesto ? The ingredients are the same, only the procedure changes which we will now illustrate in detail:

  • Combine the courgettes, parmesan, pine nuts, basil, garlic and a pinch of salt in the bowl and blend for 1 minute. speed 6.
  • Then pour in the oil and emulsify for 1 minute. speed 4 first and then 30 sec. speed Turbo later. Between one step and another, if necessary, bring everything together with a spatula on the bottom.

Depending on how much water the courgettes naturally contain, it may be necessary to adjust the final density of the pesto. If you are not afraid of fats, add the oil little by little to obtain a creamy consistency, vice versa, use some water .

The courgette pesto with the Thermomix can be kept in the refrigerator in a jar with a cap for 3-4 days. To best preserve it, we recommend covering the surface with a layer of raw oil to further isolate it.

It is also possible to freeze the already portioned courgette pesto and store it in the freezer for up to 6 months. If necessary, defrost it in the refrigerator and use it in your recipe, adding one or two tablespoons of the pasta cooking water for stirring.
