Courgettes stuffed with ricotta in an air fryer are delicious

The main ingredient is the courgettes which must be emptied of their pulp and then this must be mixed with other tasty ingredients. The filling is enriched with ricotta , which makes it deliciously creamy. With this quick and easy recipe, courgettes become even more delicious!

Preparing Recipe for Ricotta Stuffed Zucchini in Air Fryer

1. The first thing to do is wash the courgettes under running water and then dry them with paper towels.
2. Trim off each end and cut them in half , working lengthwise.
3. Take a teaspoon and use it to scoop out all the pulp from the courgettes, being careful not to get close to the peel.
4. Transfer the pulp into a bowl and salt it; then, also salt the inside of the courgettes.
5. To the pulp, add the egg, the ricotta and the crumbled breadcrumbs.
6. Also add the grated Parmesan, the breadcrumbs and the chopped parsley.
7. Mix all these ingredients to obtain a creamy and homogeneous filling.
8. Fill each zucchini with enough filling and place them in the air fryer basket.
9. Season them again with a pinch of salt and sprinkle a drizzle of oil.
10. Cook at 170°C for 15 minutes ; then, switch to 190°C to cook another 5 minutes. When finished, they are ready to be enjoyed!
