Preparing crepes with chickpea flour means satisfying both vegans, lactose intolerants and celiacs.

In addition to the absence of butter and eggs, chickpea flour is added which is already a gluten-free product with notable binding power. Together with water, oil and salt this will really be a quick and easy recipe to prepare. Your crepes will be very versatile, to be served both hot and cold, perhaps stuffed with cheeses and cured meats, for an original appetizer or a tasty dinner.

How to prepare the recipe for crepes with chickpea flour

  1. Place the chickpea flour in a bowl.
  2. Add the olive oil and salt and gradually add the water . Mix by hand with a whisk until you obtain a smooth and homogeneous mixture.
  3. Grease a non-stick pan with vegetable oil and let it heat well.
  4. Take some batter with a ladle and gently pour it into the pan, distributing it evenly. You can use the appropriate utensil or rotate the pan by holding it by the handle.
  5. Cook each crepe for a couple of minutes until the surface is golden. Flip with a spatula and continue on the other side for a minute .
  6. Arrange all the ready crepes one on top of the other on a plate and leave the guests the pleasure of filling as they wish!

Conservation

You can store the crepes (unfilled) in the fridge for 2 days , well covered with cling film.
