Cuban-style trofie are a delicious first course, based on tomato, cream, peppers and rum: a true delicacy!

Cuban-style trofie have a slightly alcoholic flavour , thanks to the presence of rum. This first course is usually prepared with maccheroncini or penne, but we offer it in a version with trofie, which goes well with this delicious sauce. The simplicity of preparing this dish is truly disarming , and will make you look good even if you are anything but good at cooking: we guarantee it!

How to prepare Cuban-style trofie

  1. To prepare this quick first course, start by finely chopping the shallot (alternatively an onion is also fine) and fry it lightly in a pan with a little extra virgin olive oil.
  2. In the meantime , cut the pepper into julienne strips and then brown it in a pan with the onion over a fairly high heat, also pouring in half a glass of rum.
  3. Wash and cut the tomatoes into cubes .
  4. When the pepper has softened, add the tomatoes to the pan, season with salt and complete cooking.
  5. At this point add the cooking cream , and if the sauce is too thick, you can thin it with a little cooking water.
  6. Cook the trofie in plenty of salted water and, when they are cooked al dente, sauté them with the sauce.
  7. Serve your Cuban trofie as they are or after sprinkling them with chopped basil or parsley.

Like all first courses, Cuban pasta is at its best if enjoyed immediately after preparation. However, you can keep it for a couple of days in the fridge in a tightly closed container. If necessary, just heat it in a pan to finish off any leftovers.
