Cucumber jam is a very simple recipe to prepare but equally particular. Cucumbers, one of the typical vegetables of the summer season, can be preserved in many ways, the classics are cucumbers in oil or vinegar, but jam is also an excellent preserve that you can prepare throughout the summer. At the end of the preparation you will obtain a soft and delicate jam, an idea to spread on bread or to combine with cheeses of all types. Let's see all the preparation steps right away.

Preparation of cucumber and vanilla jam

  1. First, peel the cucumbers, wash them then cut them in half and remove the seeds.
  2. At this point cut the cucumbers into slices and place them in a steel saucepan with the sugar and lemon juice.
  3. Mix well and let rest for at least 2-3 hours.
  4. Once the marinating time has passed, put everything on the heat, cut in the vanilla, remove the seeds and add them to the rest of the ingredients.
  5. Cook for the time necessary for all the liquid that has formed to dry, then blend everything with an immersion blender.
  6. Put it back on the heat and let it simmer for another two minutes.
  7. Drop a teaspoon of jam onto a saucer, leave to cool and tilt the saucer. If the jam doesn't run, it's ready.
  8. Pour the jam thus obtained into carefully sterilized glass jars, close with the lids, turn them upside down and let them cool before storing in the pantry.

Alternatively you can prepare papaya jam .

storage

Cucumber jam can be kept in the pantry for a few months , away from light or heat sources. Once opened, however, it is best to keep it in the refrigerator and consume it within a week or 10 days. We do not recommend freezing in the freezer.
